Sweet Berry Salsa With Cinnamon Chips

Ingredients

  • 1 Pint Of Strawberries
  • 1/2 Pint Of Raspberries
  • 1/2 Pint Of Blueberries
  • Juice Of Two Lemons
  • 2 Tablespoons Of Dry Basil

Instructions

  • Rinse all of the berries with fresh water
  • Cut off stems and dice them into quarter chunks.
  • Place strawberries, blueberries, and raspberries into a blender.
  • Squeeze two lemons each into the blender over the berry mixture.
  • Put two tablespoons of dry basil into it.
  • Slowly pulse mixture together.
  • Don’t over-blend the mixture.
  • Pour salsa into a container and seal, then place it in the fridge.
  • Allow the salsa to cool for at least 1 hour.

Tomatillo Salsa

Ingredients

  • 20 Tomatillos
  • Brown Sugar To Taste
  • 1 Ounce Reposado Tequila
  • 1 Cilantro
  • Pinch Of Salt

Instructions

  • Sauté the tomatillos in olive oil. 
  • Chop or food process into a nice pulpy mess. 
  • Add the rest of the ingredients. 

Grilled Corn Salsa

Ingredients

  • 6 Fresh Shucked Corn
  • 3 Tablespoons Olive Oil, Divided
  • 1/2 Cup Minced Red Onion
  • 1/2 Cup Chopped Cilantro
  • 1 Teaspoon Grated Lime Rind
  • 2 Tablespoons Fresh Lime Juice
  • 1 Teaspoon Kosher Salt
  • 2 Red Jalapeños, Seeded, And Minced

Instructions

  • Preheat the grill to medium-high. 
  • Brush corn with one tablespoon of oil. 
  • Grill, uncovered, often turning until charred for 15 to 20 minutes. 
  • Cut kernels from cobs.
  • Combine corn, two tablespoons of oil, onion, and remaining ingredients. 
  • Store in the refrigerator for at least a week.

Thai-Style Salsa

Ingredients

  • 1 1/2 Tablespoons Fresh Lime Juice
  • 2 Teaspoons Red Curry Paste
  • 1 Teaspoon Toasted Sesame Oil
  • 1/4 Teaspoon Kosher Salt
  • 1 Pint Chopped Grape Tomatoes
  • 1 Seeded And Minced Serrano Chile
  • 2 Tablespoons Chopped Fresh Cilantro

Instructions

  • Whisk together the lime juice, toasted sesame oil, red curry paste, and kosher salt in a medium bowl.
  • Add chopped tomatoes and seeded minced serrano chile
  • Mix well to combine. 
  • Stir in chopped fresh cilantro. 
  • Let it still 10 minutes before serving.
